8 jarretes de Ternasco pequeño / 1/2 debolla / 1 zanahoria / 1 diente de ajo / 1/2 puerro / 1 hoja de laurel / 2 tomates maduros / aceite de oliva / harina / coñac / sal y pimienta.
Agregar las verduras troceadas y cocer unos minutos, flambear con el coñac, echar una cucharada de la harina, dar unas vueltas y mojar con caldo hasta cubrir. Añadir el laurel y si se desea, un ramillete de tomillo. Cocer una hora a huego lento. Sacar los Jarretes y reservar. Pasar la salsa por el turmix y por el chino.
Rectificar de sal y ligar la salsa: si está clara con un poco de maizena disuelta en agua fría, o con caldo si está espesa. Agregar los jarretes y cocer 2 minutos.
Servir con patatas torneadas o verduras, champiñones o setas.
Si fuera preciso y a la salsa le faltara color, podemos añadir un poco de tomate frito.
